They start with gloves instead of thick gauntlets

Leather. It may be intentional, because they don't need to eat that often.

To my knowledge, thick gauntlets are not made of metal.

It's intentional. You also might notice that they wear more elegant armor, etc. But I totally failed to take poison hands into account. Fixed.
