I haven't ADOM played in a while, tried to play today but the game wouldn't open. It flashed on the screen for a moment then went away. Anyone Know what could be causing this?

Check your adom_dat -folder, if there's a file named "adom.prc", delete it.

Where can you find that folder on a Mac?

Depends on the version you play. It's probably in the ".adom.dat" hidden folder in your home directory, e.g.
/Users/jt/.adom.dat

You can check the FAQ (https://www.adom.de/home/faq.html) for more information. I guess you are playing an older version, this file was removed a long time ago.
